Sick Boyfriend Food

A few weeks ago, my Boyfriend got sick, he is still sick at time of writing but that's another issue of its own. It was a Sunday and our usual date day, except I has called it off. He was very sad but he understood because he was unwell and since I had just gotten my own flu, it was better for me to stay away.

What he didn't know was I planned to secretly surprise him by showing up to his house. I had bought him sudafed PE tablets, a potent combo of phenylepherine and ibuprofen, enchinaea, garlic and horseradish tablets, stuff to make roasted garlic and tomato soup as well as a large feta, bacon, spinach and mushroom quiche. Best girlfriend ever.

Geez it was hard to keep quiet though! I knew that he was too unwell to even buy any medications or go shopping for more groceries, his cold was affecting his inner ear and sense of balance and I kept hearing him fall over when we were on the phone together. Not to mention the usual cold symptoms of a sore throat, persistent cough and dripping nose. My poor boyfriend ):

He had been asking me where pharmacies were around his house. I knew of course, but I told him I didn't know where any of them were or if they were open that late on a Saturday night. He even thought about going to Coles for medicine which would've made my stuff useless! So I told him Coles wasn't open that late!


Mwhahaha I lied!
I spent all night asking him about what kind of soups he liked because soup is amazing when you're sick! He likes all food and he kept refusing to look at recipes with me because of how hungry he was! I went through all the soups I knew how to make, my notebook had five recipes plus stuff I made up for him a French onion, potato and leek, roasted garlic and tomato, chicken and veggies and a Spanish style meatball or sausage stew. It was just up to whatever was looking good at the markets that day.

He later told me he didn't suspect a thing because I always spam him with recipes I want to cook anyway hahaha.

It was so hot that day and I had ridiculous amounts of groceries with me, so when I called him, the first thing I said was, "Open the door, its fucking hot." He was baffled and had no idea what I was talking about. I had to repeat myself and kept tapping on the window. The look on his face was priceless.

Anyway time for the recipe!

Roasted Garlic and Tomato Soup.


Delicious.
Uses: The dying grounds of a toasted cheese sandwich and making someone better

Ingredients:
2 bulbs of garlic
Olive Oil
Salt
1 large onion
2 cans of tomato or 1.1kg of diced, fresh tomatoes, overly ripe if possible
1L of chicken stock
100mL of single cream
1tbsp paprika
Balsamic vinegar
Brown sugar
Basil for a garnish if desired

Instructions:
1. Turn your oven up to 180. Drizzle you bulbs of garlic, paper skins on and everything, with olive oil and sprinkle with salt. Bake for at least half an hour or until you can easily squish out a clove of garlic from its skin by pressing down

2. Saute off your onions until a light golden brown on a good medium to hot heat
3. Throw in your tomatoes and chicken stock
Tomatoes! Simmer down you lot ahahaha
4. Start seasoning after the tomatoes change colour and soften entirely. I used two tablespoons of balsamic vinegar and brown sugar to balance out my fresh tomatoes. Vinegar for overly sweet and to round out the flavour and brown sugar to round out the acidity. Throw in your paprika too.

5. Bring to the boil and allow to simmer for at least 20 minutes-40 minutes. Throw in the roasted garlic cloves. Skim off any scum that dare appears

6. Blend on high in thirds with the lid pressed down firmly, cause the steam, heat and force of the blender will pop that lid straight off.

7. Stir in your cream and allow the soup to boil once more and serve with basil. Feel free to strain the soup if wanted.

I didn't intend to make a quiche that day but I lost a dare so here I was. What was the dare, you ask? Well, the previous day, I had a broken bed in one of my patients' rooms. The top of the bed was raised at a 90° angle and I needed to drop the head and make the bed. Except I couldn't get it down. The remote wasn't working, the cords were all plugged in, it was charged, the emergency release didn't do anything, the remote lock on the bed wasn't on. I tried everything! I even got Lin., to come in and help me and she did everything I did too!

So H. walks by later on and asked me why my bed was still up at such a weird time. I told her what had happened and she asked me what I would give her if she were to fix my bed.

"Chocolate?"

"I don't want chocolate," H., replied, "I want a quiche like you made your Boyfriend!"

"Yeah okay." I had serious doubts she could fix the bed if Lin., and I couldn't.

She punched the bed and she used the remote to lower the head of the bed.

"What do you want on your quiche?"

So that's the story of this quiche. It had onions, garlic, Danish feta, bacon, spinach and mushroom in it. I used the same recipe as my last quiche, so just swap the ingredients really.










The Boyfriend and I went to my workplace afterwards and gave the quiche to H. She texted me after we left and said that she had eaten about 1/4 of it on the way to the car and that it was delicious. She then texted me later that night saying her boyfriend had eaten half of the quiche and that she had to hid the rest of it for her lunch the next day! Hahahaha, apparently she loved the Danish feta cause it was a lot milder and less salty, the exact reason why I love Danish feta!

Oh and I made blueberry pikelets too!

Blueberry pikelets

Uses: using up that punnet of blueberries your boyfriend refuses to eat

Ingredients:
1 cup of self raising flour
1 egg, beaten
3/4 cup of sugar
Vanilla essence if you want
A punnet of washed blueberries
Oil or butter for the pan

Instructions:

1. Sift flour. Mix everything together in a bowl.  The batter should be the consistency of thin cream
2. Heat the pan to a high medium and grease with oil or butter.
3. Dollop some of the batter onto the pan, add a few blueberries. Flip once bubbles appear and they stay popped. Always expect your first pikelet to burn, its just a rule of thumb.
4. Repeat with the remaining batch

Why are the pikelets so burnt? I used an uneven concave in the centre pan. I didn't realise it at the time, so it caused uneven heat on the pan ):




Hooray for the first dual phone and computer blogged post! I wrote up the majority of this on my phone and added the final touches on my computer like photos and things. Not bad :)
